Dillon's Restaurant was created by Rich Dillon and George Valverde. The partnership grew after working together and recognizing that their combined expertise was the perfect recipe. Rich's knowledge of menu concepts and his kitchen knowledge combined with George's management style creates a cohesive loyal following of employees and guests.

Since Dillon's beginning in 1999, we now proudly inhabit three locations, as well as provide valley-wide Catering.
